Tasting notes

Glittering pale yellow colour. Elegant, complex nose with aromas of quince, apricot, fresh verbenawith a lemon finish. Envelops the palate with fine acidity, and mineral and fruity notes such as blood orange, pineapple and lemon confit.

Serving temperature : 14 to 15 °C.

Food pairing

Scallop carpaccio, smoked trout, tartar of oysters, sushi and sashimi, sea bream baked in salt, monkfish with cream or roasted sea bass with fennel.

Harvest

From 15th September 2017.

Winemaking

Mono-varietal winemaking at low temperature. Ageing on lees in oak, with regular battonage, before blending.
